Hi Tony,

Have a look at http://gnucash.wikia.com for a step-by-step guide on setting up 
the VAT structure within GC.

There is also a good explanation for setting up the chart of accounts tree at 
the link given here:

I'll cheerfully try to answer any specific questions that you have about how I 
have my books set up for VAT etc.
