Seeing date and amount in the "Match payees/memos to GnuCash accounts" step

No, because the importer combines transactions.  I.e., if you have
multiple transactions with the *exact same* payee or memo, the importer
will only display the payee/memo once.  I.e., if you have 100
transactions that all say "PPublix" then the importer will show "Publix"
only one time, and you can apply it to Expenses:Groceries.

So alas, there is not an easy way to display associated date(s) and
amount(s).
