Two simple approaches:
1. Delete the unwanted splits while entering the new txn
2. Enter the new txn with a different Description and, after it's done,
go back and change the Description to what you want.
Roughly speaking, Gnucash assumes that, if there's a previous txn with
the same Description as the one you're entering, it should copy all the
details and let you update whatever is necessary.
