In Edit > Preferences > General you can specify how long log files are
to be kept for.

The files are created each time you save rather than when you close GC
(I believe).  I don't think GC has the ability to copy them elsewhere.

If by Gnu file you mean the ones with the .gnucash extension then the
answer is yes.
