Rachel, an answer to your question depends on your general data backup 
procedures.

For example, suppose you ran a monthly data backup (a copy of your data 
directories to an external device). Then there would be no need to keep 
any of the backups made by gnucash more than a month since you would 
have a copy of them elsewhere.  If you ran a nightly backup, then no 
need for more than a day or two of them.

If you DON'T have a generalized data backup procedure, sooner or later 
you will have a disaster no matter what backup copies gnucash is making.

The backups made at every save by gnucash are essentially protection 
between "real" backups but are providing protection only from "soft" 
disasters.
