I would specifically suggest that you do not use the PostgreSQL backend.
The database backends are not stable enough for everyday use. Your
intended user group cannot be guaranteed to have the skills to cope
with a failure in the Gnucash / PostgreSQL combination, and would find
such a failure a reason not to continue with your FOSS information
system.
