You start gnucash and ignore/bypass new set up like you said. You should 
eventually find yourself in a "no file" situation. From there, File => 
Open and direct it to open your old gnucash books (you say you know the 
name of the file).

Next time should come up opening these books all by itself as they would 
be the last ones open.

PS: a little different for me as I always bring gnucash up "no file". 
That I was last working on one set of books for one organization means 
unlikely that I would want to open it again before a set of books for 
some other organization (that would be true ONLY when I need to take a 
break while working with one organization's books but 99% of the time I 
can finish in one sitting -- these are low volume organizations).
