GnuCash lists all debits and then all credits.  So yes, it will
generally reorder them as you enter them to put all debits first.

Note that you can always use the up and down arrows to move between
splits.

One thing to keep in mind:  never use "enter" until you're *done*.

But I still don't understand what problem you're having.  Splits work
fine for me and I can enter/update e.g. my payroll quickly and
efficiently.
