Clear recent accounts cache

You need to exit gnucash, then you'll need to edit the underlying
settings (either in gconf, dconf, or otherwise depending on your gnucash
version and OS/Distro).

But I'd ask why you need to edit it?  It's just there to make it easier
to open recent files.

At one point there was a plan to get gnucash to auto-remove files from
the list that didn't exist if you tried to open them.  But I don't know
if that was ever implemented.
