icon text

I have been using gnucash for over ten years and have not really thought
about the interface after the initial learning curve.  Recently I upgraded
my OS and the new version of gnucash became 2.6.1.  I've noticed a change
that I would like to revert.

Most icons no longer have text.  How do I add back the text, or even better,
have only text and no icons?  I would rather not have to hover over every
icon in order to figure out what it does.

As an aside, the "Grand Total" at the bottom has always been blank.  Why
is that?
