It's true there is no option to change the font of the notes field 
*only*. On Windows you do have the option to change the font that is 
used for *everything* in GnuCash though.

For this can use a separate tool that is shipped together with GnuCash. 
This tool is called "Select Theme" and you can find it in the start menu 
in the GnuCash group.
