How difficult is it (really) to reorganize a Chart-of-Accounts after the fact?

the food account would be a subsidiary account of the same type as
checking.
then the money would go from Assets:Checking:food to
Expenses:Food:veges / meat / groceries
I use the plain language descriptors in the interface, so I avoid debit
and credit, which flip forwards and backwards with your point of view
(bank vs customer)
