Welcome to the list.
You can run many (more-or-less) independent gnucash files for different
purposes. File -> New is your best place to start!
Gnucash handles different accounts files in much the same way as a
wordprocessor handles different documents or letters.
I say more-or-less in my first paragraph, because some of the options and saved
reports settings work on a per-user basis, not on a per-file basis. Just be
aware, that's all, that saved reports might not make sense if run on the
"wrong" set of books, and financial year is not settable per-file, for example.
GC will re-open the most recently used accounts file by default, if you are on
a Mac, that is something else to look out for, as clicking-to-open a datafile
on the Mac has no effect - not the case on Linux (or Windows AFAIK), where
clicking a datafile will open it, ready for use. (like you'd expect from a word
processor)
