Depending on what you want to achieve you can do this either by selecting
accounts to go on reports which you can save for re-use or through the
actual account structure itself.

Also look at Customer / Vendor jobs to group things together and
Chargebacks to link purchase documents to sales.

There was a good write up in this list not too long ago that might help.
