GnuCash 2.6.18 includes the latest libz (libz.1.2.11.dylib, to answer your question), so that’s not what’s going on.

Most likely there’s an open dialog blocking GnuCash’s event loop. They have an annoying habit on Macs of hiding behind other windows or appearing in the wrong Space, particularly if you have more than one monitor. Once you’re sure that’s not the case you can open /Applications/Utilities/Activity Monitor, select GnuCash, click the gear in the toolbar, and select “sample process” from the menu. Save the resulting report to a file and open a bug report, attaching the saved file.
