Yes.

Just start a new GnuCash book file for the new entity. Create its account structure as you wish. Save the file. (probably using the name of each entity helps)

Only one file at a time is allowed to be open. (the same holds for Quickbooks incidentally)

Open the file corresponding to the entity you want to work on, do your work, save, then open a different book and so on.

I have one book to manage my personal finances, and another to manage a club I belong to. Switching is as easy as File > Open. I have auto-save turned on, and I leave GnuCash open 24/7, so generally I don’t even have to save my work first unless it’s a real quick switch.
