Preferences > Accounts > Default Currency.
I think ‘Locale’ is the default. If your computer’s locale is not set to CAD, then either change that in the OS settings, or specify a currency using the ‘Choose’ option, leaving the locale as-is.

*note - you may want to check over all of your accounts using the ‘Edit Account’ option and make sure they are all set to the appropriate currency.
