[GNC] Accidentally Created .LNK file and now my entire GnuCash file is overwritten and I can't get back to work

That's one way of finding it indeed. Of course "Accounts" in your example 
should be replaced with the real name the user gave when saving the books for 
the first time. There is generally some confusion about this: a gnucash "book" 
is to gnucash what an excel file is to excel. You can create multiple such 
books or files and save them whereever you find convenient. Then you open the 
one you wish to work on via File->Open and you're good to go.
The main differences between gnucash and other regular applications are:
* typically users only manage one book of accounts, so they rarely make more 
than one book
* as that's the most common case, gnucash has been optimized to reopen the 
last used book when you start gnucash. While primarily meant as a convenience 
it makes people forget after a while gnucash and the gnucash book are two 
separate things...
