I don’t profess to understand the significance of the various entries in Font Book, but my experiments show that the entry to use is actually the Family name. For most fonts, the Full Name and the Family name are the same, but for those fonts with different Full Name and Family names, the Family works, but the Full Name does not. 

[On my own machine, in some kind of cosmic kharma thing, there seems to be an exception for the one font I tried to use to test changing the font (“Big Caslon”). It just doesn’t work, which is a mystery I may never solve.]

My experiments showed that the Postscript name never worked.

Thanks for the assistance, I’ve had an entertaining time trying out various fonts and sizes. One’s books look ever so much more impressive when you render them in Edwardian Script ITC!
