I suppose you mean on some hosted macOS virtual machine connect to your iPad with VNC. Nobody's reported trying, but I don't see any reason that it wouldn't work: It does fine on VMWare Fusion VMs. Hosted macOS VMs tend to be expensive so keep in mind that GnuCash works on Linux and MSWindows too.
