Robert,
You've replied to a thread that Rob started in 2011. I imagine he either has figured this out, or given up on Gnucash by now.
But thanks for the links to your answers on StackExchange. It's always nice to read other people's solutions to the common issues. Many of those have been placed in the documentation, on the wiki, and discussed on the lists as well.

Hi Rob,
I actually started just like you and GnuCash grew on me. I posted an answer
on StackExchange::PersonalFinance that explains how I started using it and
how I found it useful. Key concept here is - gradually, start with something
and then build. It will need iterations for you to become better, try not do
everything at once. All these posts are not very long. If you have specific
