I can help with this BUT ......

a) The how to set up the CoA and what is normal for reports isn't REALLY 
a gnucash question. In other words, were you still keeping your books 
the old fashioned way pen and ink on paper, what would your CoA look 
like and what would your reports look like.

b) Because the Board of Directors probably want a different level of 
detail than you might need to fill out reports you must file with 
authorities, perhaps the easiest approach is to create the reports with 
the highest detail required, export from gnucash, and then edit the 
reports to simplify detail as desired. For example, if doing a 
990/990-EZ "printing and postage" is a line item but the BoD probably 
wants to see total event cost, not how much was printing and postage. Or 
with interns, etc. you need to know how much each paid (need to fill out 
a 1099-MISC) but the BoD probably wants to see just the total for all 
interns.

c) The titles of some reports are different. For example, not "Profit 
and Loss" but "Revenues and Expenses" (but it i the same report). It is 
customary for the annual report to do current year and previous side by 
side, but again, this is easiest done outside of gnucash using your 
favorite editor. Normally you want the ability to add 
annotation/footnotes for anything unusual and a full power editor makes 
that easier.

d) A minor annoyance but gnucash does not allow using business features 
like invoicing without being on the accrual basis but the membership 
often wants membership statements. There are work-arounds. The point 
here is that membership dues in a voluntary organization are not a 
receivable (there is no obligation to renew membership)

e) I can only help with state filing requirements for Massachusetts 
(don't know what those might be for any other jurisdictions)

f) You did NOT say what sort of non-profit (under what designation)
