Just continue to type out fully what you want in the description and if it doesn’t match anything that it has then it will retain what you have typed in exactly as-is.

This is unlikely to be a bug. Bugs don't just affect you.
However your description of the problem isn't clear enough for us to be of much help. Try again. When you try to type in the description that you do want, what prevents that? Because of "autofill" gnucash will try to enter a "match" from the past << a previous description that starts the same way >> I experience this. You might have to fight with gnucash a bit to get what you want entered. Assuming you want to have autofill working for other than the situation causing the problem, here is a trick you might find useful;
Start entering the description that you do want (the one that is getting caught by autofill) with an obvious wrong starting character. I usually use "q" or "x:, etc. Once you have typed in the description that way (it won't get caught by autofill) you go back and delete that starting character. Of course this isn't a trick specific to gnucash.
