you'll see it's a known issue and will be fixed in the next release in a
couple of weeks time.

In the meantime you can go back to the previous version (5.5) which it
seems doesn't have the issue. Instructions for downloading the previous
version courtesy of Fred B in the other thread.
If you follow the link "More downloads" (4th bullet-point under "Download
GnuCash 5.6") the bottom link on the resulting page is "View all GnuCash
downloads" giving
https://sourceforge.net/projects/gnucash/files/
which should get you what you want
