but your question is obviously about understanding the practical impact
from a user's perspective. I note lots of Gremlins reported in the mailing
list about V5.

seems relevant (no data file changes confirmed by lead developed), GnuCash
V4.14 being the last V4 release. Using the same data file with V4.14 or
V5.6 seems a low risk upgrade path as long as you are not running custom
reports.
