[GNC] macOS change (Intel to Silicon)

GnuCash.app isn’t installed, it’s a drag-and-drop application bundle that contains everything it needs that the OS doesn’t provide. Consequently you can have as many versions of GnuCash installed as you like. The only restriction is that they can’t have the same name in the same directory. When you drag a new one to /Applications Finder will ask you if you want to replace the old one or keep both. If you choose replace it will move the old one to the Trash folder before copying the new one; if you say you want to keep both it will append a number to the filename, e.g. Gnucash 2.app.
