As Adrien elsewhere has mentioned WinGet is from MS, but WinGet can update more than just Microsoft Store packages.
I think the details about how to get a package into the supported list is here https://learn.microsoft.com/en-us/windows/package-manager/package/ under the heading Submit packages to Windows Package Manager
It may be that, since GnuCash is already in the list, it may be just a matter of updating the entry to reflect the latest version. I have not read the above link yet.

I use UniGetUI which uses WinGet and other package managers under the covers but provides a helpful UI.
If I search for GnuCash in that I find that there are several providers of GnuCash
The relevant ones are:
PackageID Version Source
gnucash 5.8.0 Choclatey:community
GnuCash:GnuCash 5.6 WinGet:winget
There is also one from Npm (NuGet Package Manager) but it does not say what version.
So, it looks like WinGet does know it but does not have the latest version. I am a newbie to these package managers in Windows and do not know how they get updated, but I think David’s suggestion is correct.
I will see if I can find out how these things get updated. It may just be up to someone to suitably notify the package manager people about the update. They are likely a volunteer powered outfit too.
