[GNC] Set up a security, what now?

Hi all.
I've added VT security in my Security Editor. I've chosen to have it
automatically updated using Alpha Vantage, for which I got an API key.
Now, some instructions I found tell me to go under "Edit - Preferences" but
on MacOS with GnuCash 5.9 there's no such menu option. So my first question
is: where do I have to enter the API key for Alpha Vantage?
The next question would be: how does automatic retrieval work? Will it
retrieve the value of the securities only once when I start GnuCash?
