Based on this email, I found a solution.
In xfce, there is a dropdown that displays icons presented by .desktop
files, thus: /usr/share/applications/gnucash.desktop. That looks like a
script to me. However, simply adding the environment command appears to
cause an error, because doing so results in no icon being displayed.
What does work is replacing the Exec command in the gnucash.desktop file
with the following line:
Exec=bash -c 'WEBKIT_DISABLE_COMPOSITING_MODE=1; gnucash %f'
It appears that xfce relies only on executables, and (thus?) ignores the
environment.
