So, in an SQL program, having loaded your GnuCash database, you can delete only Finance::Quote prices with:
DELETE FROM prices WHERE source like 'Finance%'
Of course, you're messing with your GnuCash data file outside of GnuCash.
THIS IS DISCOURAGED STRONGLY BY EVERYONE INVOLVED WITH THIS SOFTWARE.
DON'T DO IT.
Should you choose to proceed anyway, WORK ON A BACKUP COPY OF YOUR FILE.
Also, be aware that the price database doesn't affect your actual financial data such as transactions and holdings--although it does affect valuation of those holdings.
Deleting prices for a specific commodity is more complicated, since you need to look up the human readable name in a separate table by a join. I'm not at my machine right now to work out the syntax for that, however.
