I think flatpack is probably the best way to go. The instructions do
look a bit intimidating I agree. As long as you make sure you have
secure backups of the GnuCash data files you can't really get into too
much trouble though.
I use Linux but not Mint so I'm not the best person to help with
details, maybe there are Mint users here who can help some more.
