[GNC] Default Currency Issue! GNU Cash 5.1 windows

Hi,

We seem to run into this issue after installing the software and 
starting it up for the first time to set up.

Running setup for the first time gives us no choice only US Dollar.

Closing the software down and restarting it choosing new file it does 
give us a choice as in our case Australian Dollar.

But after entering all our details and saving it it reverts back to US 
Dollar!

Is there a way around fixing this or we have to change this in 
preferences to choose Australian Dollar.

We are running windows 11 and got all updates!
