You can get older versions of flatpaks from https://code.gnucash.org/builds/stable/. The releases are the ones without a training git commit, e.g. gnucash-stable-C.11-D.11 (C is for code, i.e. the program itself, and D is for documentation, i.e. the Manual and the Tutorial and Concept Guide).
Ubuntu users can get up-tp-date GnuCash releases from https://launchpad.net/~gnucash/+archive/ubuntu/ppa/ and Debian ones from the current backports Source.
