There is no fully automatic price retrieval in GnuCash. You have to explicitly tell GnuCash to retrieve prices either from Tools>Price Editor, the Transfer Dialog, or the command line.
That said, GnuCash does add transaction prices to the price database to ensure that there’s always some price in there so that things that depend on that don’t crash. That’s not new, it dates back to GnuCash 2.6.
To get a balance sheet report that doesn’t show unrealized gains select Average cost of purchases weighted by volume in the Price Source option on the Commodities tab of report options. You’ll probably want to save that configuration for reuse; you’ll then run it from Reports>Saved Configurations.
