You’re basically claiming behavior of which I think GnuCash doesn’t know how to do. It’s true that you don’t directly configure online exchange rate retrieval for currencies in the Security Editor, but you still have to configure a key for one of the currency sources and if that source isn’t Alphavantage set an environment variable telling Finance::Quote to use that source. Plus you have to install Finance::Quote on any platform except Flatpak.

GnuCash also doesn’t have anything built in that retrieves prices or exchange rates without being explicitly told to do so.
