I do the same thing others do with respect to calculations, Set up a 
spreadsheet to calculate the interest/principle splits for a particular 
payment. I always pay down principle at in excess of the current 
payment, to save on interest in the long run, and because frankly, I 
don't like having debt.

Once I get near the end, I'll inquire from the lending bank as to what 
the payoff balance is, and make the final adjustments necessary in my 
last transaction that will close out the loan in Gnucash. I might not 
know to the exact dollar what my principle is, but I'm pretty close and 
by the end it'll all be worked out anyway.
