Adopt best practice:

Don't use the SQL backend; just save your books as files.

Don't compress your files: make sure the "Compress Files" checkbox, on the

  Menu->Edit->Preferences->General

dialog, is unchecked, and save the book.


You will have a file named

<mybook>.gnucash

or, if you are older than many on the list,

<mybooxk>.xac

Make a copy of your file.

Open up your file in a simple text editor.

Use the Find/Replace functionality of your text editor
to Find and Replace the name of the payee.

That's it.

As long as you make backups as you go along, there are lots of things
you can do to/with the GnuCash book files, that you can't yet do through
the GUI register.
