Thanks everyone for the tips. On a whim, I searched the Internet on this
problem, the Brave AI search, and I think I found a simple answer. I had
saved instructions on how to adjust the columns (see below). The AI results
said to close GnuCash using the Quit command at the bottom of the file menu
to leave the program and the adjustments would lock in. I had never closed
the program that way, only used x in the upper righthand corner. That seemed
to work and on every register I have opened so far. I thought I might have
trouble after shutting down and restarting the computer but no. Everything
seems to be working great and I solved my vision problem. The registers and
reports as well as the tool bar and menus are much more clear at Ariel 14
point/18px font.

p.s. Adjusting column widths in the register
Start on the far right, balance, column
Double click on the column header. It will adjust the width so you can see
the contents
Move left double clicking on each column in turn to adjust the width
When you double click on the transfer column (the other account to debit or
credit to balance the transaction), the far right columns disappear.
Don't panic. Double click on the description column, which is way too wide
anyway, and the far right columns will reappear
You have to adjust the other columns manually until the scroll bar appears
at the bottom of the page, then you can adjust the description column.
Another trick is to adjust the 5 columns on the right as above, then grab
the column marker at the top of the transfer column and drag it to the left.
All the columns to the right go with the transfer column adjusting the size
of the description column. If the date column is too small, grab the line at
the top of the right side of the date column/left side of the number column
and drag it to fit. The transfer column will adjust without affecting the
columns on the far right.
Close the program using the Quit command on the File menu and the changes
should be permanent.
