Bingo. And without an explicit "InstallScript:" in the .info file,  
fink assumes:

InstallScript: make install prefix=%i

where what works (courtesy of Dan Macks, fink-devel list) is:

InstallScript: make install DESTDIR=%d

If you like, I can send the whole build log if you want to pursue the  
gnucash-env in /sw/bin, but it isn't as important now that the rest  
of the process works.

Thanks. Now to get the new version of libofx 'blessed' so that having  
aqbanking in fink does some good for US users...
