We generally advise against using the default prefix unless you have good reason to. It 
interferes in several unwanted ways with the running system.

But anyway, next checks:

Does /usr/local/share/glib-2.0/schemas contain the gnucash schema files ? Specifically for 
your error you should look for
org.gnucash.gschema.xml and gschemas.compiled

Then, does /usr/local/etc/gnucash/environment define XDG_DATA_DIRS and if so, what is 
it set to

Do you have an environment variable XDG_DATA_DIRS set yourself ?
