Yes, the schema files you refer to are where they are supposed to be. 

No, XDG_DATA_DIRS is not set either by the "environment" file, nor by me.

We generally advise against using the default prefix unless you have good reason to. It interferes in several unwanted ways with the running system. 

But anyway, next checks: 

Does /usr/local/share/glib-2.0/schemas contain the gnucash schema files ? Specifically for your error you should look for 
org.gnucash.gschema.xml and gschemas.compiled 

Then, does /usr/local/etc/gnucash/environment define XDG_DATA_DIRS and if so, what is it set to 

Do you have an environment variable XDG_DATA_DIRS set yourself ?
