I don’t think that is a feature of GnuCash. I think it belongs to GTK. It seems to work similar to Find-in-page of browser windows.

It will only search what is visible in the tab, so a collapsed part of the tree won’t be found.

A keyboard shortcut to expand/collapse all would be nice to go along with this for sure.

It has a usability bug. If you want to search for something else, such as if you misspelled your term, you have to highlight the text to delete it and then type something different. The backspace key (delete on MacOS) doesn’t work. This might just be a Mac thing though.
