I'm assuming what you want to do is move a transaction that got put in
the "unspecified" expense account to the "Food" account or something
like that, right?

First, create the Food account if it doesn't exist.

Open the bank-account register that the transaction is drawn on.
You'll see 'unspecified' in the 'Transfer' category.  Click on
'unspecified', pick the Food account from the popup menu or type Food,
and hit return.  Done.
