order of accounts?

I believe they're sorted by account code.  Enter or change the account
code by first selecting the account in the main window, then clicking
edit.  You'll probably want all of your accounts to have the same number
of digits; if they're nested four deep, you'll want them all to have
four digits, with top level accounts having three 0's, next level has
two 0's, and so on.  See the GnuCash manual's section on "Chart of
Accounts" for a good example and explanation.
