Well, as many probably know, this topic (Reply-To) is one of the
ancient religious flame wars of the net.  Some people argue that the
behaviour of replying to all is the right thing and that posters to
the list should be responsible for setting the "X-List-Replies: never"
(or whatever) appropriately.  Others argue that list based Reply-To's
are always the answer, etc.

In then end, I think that MUA's with powerful reply commands are
probably the solution.  You should have a button that removes anything
but the "To:", and then you'd just have to hit one more key.  If
you're using an emacs based MUA, then creating that function (if it
doesn't already exist) should be easy, but otherwise it'd have to be
offered upstream...
