One more feature that I'd like is an "Opening Balance" entry option in 
the Account setup dialog.  That way, the user doesn't have to worry 
about setting up an equity account for this and entering a separate 
transaction.

Just provide an equity account called "Opening Balances" as the default 
transfer account. Let the user select another transfer account from the 
list if he/she wishes.  GnuCash should then enter the opening balance 
transaction based on the amount and transfer account entered by the 
user.  I think this would avoid a lot of confusion.
