If they're not traded anywhere, you won't be able to download a price via the 
internet, so the symbol doesn't matter that much.  GnuCash still expects you 
to enter a symbol, so type "NONE" or something similar.

You can still enter a price manually in the Price Editor at any time - how 
you determine a sensible price is another issue...
