transaction "groups"?

You should only need to do this once.  With "transaction completion", 
the rest of the transaction should automatically fill in once you 
type the description field in.

I do exactly what you describe above, and just enter my
Income->Taxable->Salary account, type "Paycheck" into the the Payee/
Description field, and everything else is filled in for me.

I don't think that recurring transactions is working in the stable/
release version yet.  My understanding is that this will be in the 
next major release (2.0?).  I'd love to be wrong if it's going to be 
sooner :)
