The short answer is no.

Apparently you can partially do it if you handle the expiry date 
manually (from Derek's post a few weeks ago):

Also, Derek explained how stock options are "promises" that you _might_ 
be able to convert to an asset, but the options themselves do not fall 
under Assets / Liabilities / Expenses / Income / Equity so GnuCash can 
not track them:

Definitely FAQ material.  I've only been following this group for 3 
weeks and it has come up 3 or 4 times.  Perhaps that is frequent enough 
to warrant a non-feature caveat on the features page 
(http://www.gnucash.org/en/features_5.phtml).
