OT, but if you specify the -v option to emerge, you can see the 
potential USE flags the ebuild accept:

$ emerge -pv gnucash

These are the packages that I would merge, in order:

Calculating dependencies ...done!
[ebuild   R  ] app-office/gnucash-1.8.4  +nls -postgres -ofx -hbci -doc
